Having grown up with cattle (not many, the most my father ever had was 35 cows and one bull, good bulls being very expensive), I have great respect for them in all their presentations - cow, bull, steer, heifer, calf.

It appears to me that most rodeo or riding events are based on jobs that need to be done on a ranch. Like the competition I'm watching now, cutting horses. Cutting one animal out of a herd for doctoring or some other reason is a perfectly common thing for cowboys to have to do, so it makes sense cowboys would want to compete to see who is best at it.

"Most bulls and horses won't buck without a bucking strap irritating them, so they try to get it off."

I can understand why it sounds that way but its not actually what you think. Remember these horses and bulls are owned by someone, and that would be the stock contractor, and he wouldn't want anything to happen to these animals that are valuable to him.
